Mediterranean Couscous Salad

Ingredients:

  1. 2 cups of couscous
  2. 1/4 cup extra virgin olive oil
  3. 1 pint grape tomatoes, halved
  4. Cucumber, peeled and diced
  5. 1/2 cup chopped flat-leaf parsley leaves
  6. 1/2 cup chopped mint leaves
  7. 4 scallions, trimmed and chopped
  8. Juice of 2 lemons
  9. 1 1/2 cups crumbled feta cheese
  10. Salt and black pepper
Directions:
  1. Boil 3 cups of water in a saucepan
  2. Add the couscous and stir it. Cover then remove from the heat, and set aside for 5 minutes.
  3. Put the couscous in a large bowl and fold in the oil. Mix with a fork as the couscous could to keep grains from clumping.
  4. When the couscous has cooled, add the remaining ingredients.
